Burger night

Cow, turkey, chicken, veal, venison, other meat that can be made into burgers, etc.  Jeff prefers the cow version. He's not a fan of all the chicken we eat in this house. And I just don't care for red meat.  So, when it comes to burger night, it's turkey burgers!

1lb of ground turkey
1 cup of fresh spinach
1 pint of sliced mushrooms
1/2 of sweet onion sliced thin
1/2 of zucchini quartered and sliced thin
4oz of goat cheese
1 roma tomato sliced
1/2 avocado slivered
Evoo (a few tablespoons)
1 tsp of minced garlic
2 tsp of fresh basil
1/4 tsp of the following: rosemary, thyme, parsley, red pepper
1 tsp of worcestershire sauce
garlic powder
salt
pepper

In a large skillet with some EVOO, cook mushrooms, onions, and garlic.  When mushrooms and onions are cooked, add zucchini, and spinach.  Cook until the spinach has cooked down.  Set aside.

In bowl add turkey and season with garlic, salt, and pepper (to your preference).  Add basil, rosemary, thyme, red pepper, and worcestershire,  Mix well and form into 4 burgers.

In a large skillet, heat up evoo.  Add burgers and cook until well done.

Place spinach and mushroom mixture on plate.  Top with burger and 1oz of goat cheese, tomato, and avocado.
